Argula / Rocket Pesto
Has any of you ever made your own pesto? This argula rocket pesto is ridiciously simple and so incredibly tasty! Yesterday I found argula/rocket salad in sale because of the short expiring date and I just had to buy them in order to make this:
So good! I use it on pasta, as a lot of people probably do. But also on crackers as a snack, to dip veggies, marinade for grilling vegetables or in pasta sauce to boost it with some extra flavour. Originally green pesto contains parmazan cheese. Storebought green pesto often contains some kind of dairy so that’s why I often make it myself. Also, I love these kind of variation with different greens on the traditional pesto. This homemade argula rocket pesto has a real great kick to it and tastes superdelicious.
- 100 gram rocket / argula 1.5 cup
- 1.5 dl walnuts 3/4 cup
- 2 cloves garlic
- 3 tbsp nutritional yeast
- salt and pepper to taste
- 5 tbsp vegetable oil (sunflower) add more if needed
- Blitz all the ingredients together in a mixer. Add oil if needed for texture.
